Ingredients:

• 1 large ham (Ideally, Llewellen’s spiced New Year’s ham from The Salty Hog. But if you’re making this at some other time of year, Llew’s regular ham will do fine)
• 2 pounds starchy potatoes
• 2 cups white sauce (roughly the thickness of light cream), seasoned with plenty of pepper
• Salt to taste
• *optional* 1-2 cups of Derringdo’s Cheese Whales

(Seyos, I can see the look on your face. I know, I know, but they are actually quite delightful. Where is your sense of whimsy, my dear?)

1. Peel the potatoes and cut in thick slices
2. Cover potatoes with cold water. Add a healthy pinch of salt. Boil until the tip of a knife pierces the potatoes with a little resistance. Drain well.
3. Cut the ham into thick slices, roughly the same size as the potatoes
4. Spread half the potatoes in a large baking dish. Cover with half the ham.
5. Pour half the white sauce over the top
6. Repeat with the remaining potatoes, ham, and sauce
7. Bake for 1 hour, or until potatoes are very soft, and white sauce is bubbly.
8. *optional*  Arrange Cheese Whales evenly over the top
9. Bake another 10 minutes (keep a close eye - watch that the Whales don’t burn)

Serves one hungry family of four. Double for holidays and special events. Quadruple (or more) for New Year’s Eve.
